Its called panning , Putting sound in left/right speakers/microphones.
Mono= is when all sound is in the centre (so clarity is effected as all instrument is in the middle , and certain sounds cant be hear.
For stereo , u can hear that certain instruments are either slightly left or right and vocals are in the middle , so the entire music is much clear , as all instruments and vocals have their own space and dont cover each other up.
